Homemade Chipotle Dinner

 

Homemade Chipotle DinnerOne of my favorite easy weeknight or weekend meals is a home made crockpot chicken tacos with all the fixings! If you don’t have a lot of time you can mix the peppers, black beans and corn all into the crockpot with the chicken. If you want to be fancy though, you can cook everything separate. Either way it’s delicious!

Quick and Easy Crockpot Chicken Taco Stew

  • 2-3 Chicken Breasts
  • 1 packet of McCormick’s Gluten Free Taco Seasoning
  • 16oz jar of mild or medium salsa
  • 8oz of water
  • 16oz can black beans, rinsed and drained
  • 1 medium onion, diced
  • 1 large green pepper, chopped into 1 inch pieces
  • 1 large red pepper, chopped into 1 inch pieces
  • 8oz frozen corn

Directions for Quick and Easy Version:                                                                                    Dump all ingredients into crockpot. Cook on low for 8 hours. Shred chicken in crockpot before serving. Serve over rice and top with cheese and salsa.

Fancy Version

  1. Make crockpot taco chicken. Cook the following ingredients on low for 8 hours in a crockpot. Shred chicken when ready to serve.
  • 2-3 Chicken Breasts
  • 1 packet of McCormick’s Gluten Free Taco Seasoning
  • 16oz jar of mild or medium salsa
  • 8oz of water

 2. Saute peppers and onions with olive oil,  McCormick’s Gluten Free fajita seasoning    mix or just with salt and pepper until browned and slightly soft. 

  • 1 medium onion, diced
  • 1 large green pepper, chopped into 1 inch pieces
  • 1 large red pepper, chopped into 1 inch pieces

3. Make corn salsa 

  • 16oz bag of frozen corn
  • 1 bunch of cilantro, finely chopped
  • Juice from 1 lime
  • 1/4 cup minced red onion
  • Salt and pepper to taste

Serve crockpot chicken with peppers and onions, corn salsa, black beans, rice, shredded cheese and your favorite taco toppings!
